Watermelon ~ Crunchy Potato Chips ~ BAKED BEANS ~ Corn on the Cob ~ Grilled Hot Dogs & Hamburgers
...[that's what we're eatin' in these parts today]


My sweet friend, Lai, loves to bake and try F.U.N. recipes. Several years ago she shared a delicious recipe for Fresh Strawberry Pie that we've looked forward to each strawberry pickin' season. Since Michael is now restricted from eating foods with wheat and dairy, as well as sticking to less sugary foods, I've been challenged to find good desert recipes catering to these specifications. Last week I pulled this recipe out and made some modifications- using buckwheat flour and using fresh local blueberries and peaches instead of the strawberries. It was a winner~for everyone! So for our 4th of July dessert, I made a couple more little changes to this recipe and made this Fresh Peach Pie:

[Fresh Peach Pie]
*Crust:
3/4 c. buckwheat flour (or all-purpose flour)
1/2 c. quick cooking oats
1/2 c. chopped pecans (I used chopped almonds and walnuts)
2 Tbsp. sugar
1/8 tsp. salt
1/2 c. butter or margarine, melted

In a bowl, combine the flour, oats, nuts, sugar and salt; stir in melted butter until well blended. Press into the bottom and up the sides of a 9-inch pie plate. Bake at 350 for 13-15 minutes or until lightly browned. Cool on a wire rack.

*Pie Filling
1/2 c. sugar (the original recipe calls for 3/4 cup, but it is just as sweet with less)
2 Tbsp. cornstarch
1 c. water
2 Tbsp. light corn syrup
2 Tbsp. peach gelatin powder (or use whatever gelatin flavor you like)
6-7 fresh peaches, sliced

Combine sugar and cornstarch in a small saucepan. Gradually add water and corn syrup; bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Remove from heat and stir in gelatin until dissolved. Cool to room temperature (I put it in a different bowl in the fridge to speed the cooling process up). Meanwhile, cut fruit and arrange in cooled crust. Carefully pour cooled gelatin mixture over fruit. Refrigerate for 2 hours or until set. Serve with fresh whipped cream!

Okay. So I'll have to try this wonderful recipe! Wow! That was years ago and before we all had kids when we had that strawberry pie and played crazy volleyball - or tried to. With our goofiness how could we really play any sport together - like that putt putt golf we tried one time with Liz. You should get a prize for being such a wonderful wife to hubby Michael and he for being such a trooper through this God-ordained change in your lives.
