Sumptious Saturday

As a kid, I detested oatmeal. It didn't matter how much brown sugar was dumped on top, it made me gag. I remember refusing to eat it for breakfast before school and finding it at my plate for dinner. Yes, my mom used that tactic. I detested that tactic as much as I detested the oatmeal.

Until I tried Laurie's oatmeal.
{which tastes nothing like the oatmeal I had as a kid. it's baked, not boiled. and it's simple.}

{ Baked Oatmeal }
1 cup sugar
1/2 cup oil
2 eggs
1 tsp. vanilla

3 cups oats
1 tsp. salt
2 tsp. baking powder
1 cup milk

Stir first four ingredients together, then add last four ingredients. Mix well. Pour into greased casserole dish and bake at 350 for 30 minutes {or till it's golden brown}.

I've modified this recipe different times:
*usually only make half batch
* use less sugar than what is called for
* add cinnamon to the first four ingredients
* serve with fresh berries & a dallop of whipped cream
* sprinkle some chopped nuts on top of oatmeal before baking
* mix a tablespoon of flax into mixture

{a few years ago Laurie also gave me her Banana Bread recipe ~ which i use regularly and make muffins instead of a loaf}
Banana Muffins
3 or 4 bananas, mashed
3/4 cup sugar
1 egg
1 1/2 cup flour
1 tsp. baking soda
1 tsp. baking powder
pinch of salt
1/3 cup melted butter
1 tsp. vanilla

Mix in order given. For banana loaf bread: bake 1 hour at 350.
For muffins: spray bottom of muffin tin with cooking spray, or use liners. Fill each 2/3 full with batter. Bake for 14-17 minutes at 350.

{some variations i've experimented with}
* today I doubled the recipe since I had a lot of ripe bananas and used half whole wheat flour and half bread flour
* sprinkle cinnamon & sugar on top of batter before baking
* mix in nuts with batter
*mix in chocolate chips ~ my kid's favorite
*today I just sprinkled some chopped pecans & chocolate chips on top rather than mixing it in the batter. It made it easier for me to make a variety of muffins using the same bowl of batter: plain, nuts, chocolate chips & nuts with chocolate chips

I'm anxious to try your banana bread recipe - I have yet to find one I really like. Looks great! And Nate and I are such nerds: we love oatmeal for breakfast. I've tried baked oatmeal and love it too!

Kris, i guess i've joined the ranks of "nerds" then ;) this is a no fail banana bread recipe. i'd tried many others before this one and they never turned out good...i think it's the buttah ;) in this one that makes it so good {i used margarine today b/c i was out of butter and it still tasted yummy}

I think I will try the oatmeal recipe this morning--I am going to try it with coconut oil--it is a very, very healthy oil I have been trying to add to all of Kaleigh's food to help fatten her up--your picture makes this look amazing! :) I have a recipe that calls for sliced apples or dried fruit and nuts, those might be fun addition to try too.

Are these the muffins you brought me at the hospital? Because those were sooooo yummy, I don't know if I even let Mark have one :) Now all I need is some ripe bananas--that seems to be a struggle in this house with all of our banana and smoothie lovers :)
